SOURDOUGH DONUTS - Banh Tieu

Ingredients:

- 510 gr all purpose flour

- 50 gr sugar (I prefer less sweet in all my food)

- 100 gr sourdough starter (I will write how to make sourdough starter later on )

- or 2 teaspoons instant yeast if you have no-ready sourdough starter

- 2 teaspoons double baking powder

- 350 ml water

- 1/2 teaspoon salt

- sesame seeds, for sprinkle if you prefer


Instructions:

  1. Mix in a large bowl all the ingredients ( flour, sugar, baking powder, salt, sourdough starter, water). The batter will be slightly wet and sticky.

  2. Cover the bowl with plastic wrap. Let it rest for 30 minutes.

  3. Open the plastic wrap, stretch and fold lightly the dough. Cover it with plastic wrap. Repeat the process 4 times in every 30 minutes.

  4. Let the dough improve at least in 6-8 hours, or until double in size.

  5. Sprinkle flour generously in working surface. Shape the dough in small rounded. It shall make 17 batches. If you have sesame seeds, roll the dough in them.

  6. Let the dough improves again at least in 30 minutes, until it doubles the size.

  7. Fry them in medium heat with vegetable oil. Flip the so often until golden brown.
